Transition to a plant based life today - ghost writing needed

I am in need of a work book to be writing on the subject of switching to a plant based diet for life.
I would prefer someone vegan or plant based or at least to have a good idea what it is about that would allow for self expression and passion.
I have some of the book written and some different pieces in place. I have many areas that need content.
Also, I am trying to position it as a blue print for transitioning to plant based. So, I will need a "things to do" (day one) - ( clean out the cupboards of everything non plant based - for instance )
This can be in check sheet form, or list form but should show that I am giving them the things they need to do to transition most easily.
I am think about spiral bound book and while I think 5.5 X 8.5 would be good it might be a 8.5X11 size spiral bound book.
It would need some images which I have some to provide.
This is NOT a research based book but rather talking in first person about things I know or have learned and passing them on as an authority.
I am starting a podcast as well, which the first couple episodes will be translated that can edited and rewritten as "my story"..
I have a rough table of contents but - I am looking for some creativity from my ghost.
I assume it will be 50 pages or so. It will need to be laid out to go to print. So, please poscess the tools and skill sets to do so.
This will be somewhat of a collaborative effort but certainly not micro managed.
The book is the first step into more upsells and coaching eventually. The book will lead do learning to cook all over again and how I can teach them Professional Chef recipes. It will not be introduced in this book but can be eluded as a subject.
