Problem in language characters of web site after server transfer (asp / mbd)

We have a Web site in Greek language with asp pages with a backend for importing data. Data is written to mdb files. Site has been transfered from windows 2003 to windows 2008 server (with plesk for windows), and when trying to import new data from the backend (in Greek language), when data is saved (either new or trying to edit old) the greek charecters are altered to unknown form. Possibly it has to do with some server or account setting. We want a solution so that data will be saved as they should be in Greek.
