Creating Food Inventory Master for an ERP project

I have a list of all items purchased from a major supplier to our 10 Food Outlets for past 12 months. At present, we have a basic inventory system that does not have accurate / proper inventory items in it's master data.
I would like help from some one who would be familiar on Restaurant Operations to;
1) Review the items in the attachment
2) Come up with a "Generic Food Inventory Item List", that could be used for ordering and recipe costing and link such generic inventory items to attached supplier inventory items (I do not want to create all the supplier items as Inventory Codes in my ERP system).
Eg. Supplier will have 3 different Bread types, say white / wholemeal / white soft, where as in ERP I would like to have one inventory item called "Bread" and all 3 types of Supplier Items above can be linked. This will reduced the number of inventory items in ERP as the price variance would be minimal
3) The Unit of Measurements also need to be rationalized. In ERP, it should be ideally Kgs, Ltrs, each and each supplier items shall be then logically linked using the packaging. I am open to any better ideas or suggestions based on your experience
4) Once the Item Master created for ERP per above 2, I need to have an identifier against each item which Restaurant would be using them, based on the Customer Name in the attachment
