Modify Builder Theme to cater for mobiles & tablets

It is very important that you have worked with and understand iThemes & Builder. Please show me a reference site where you have used builder.
This project is to take Wordpress theme (Builder/Benthos) and resolve styling issues for tablets and mobiles.
Currently the theme works reasonably well at 1100px but it becomes responsive below this size either due to a configuration error or just how builder works.
I would like the theme to be as follows:-
Mobiles (Responsive) with certain modules hidden via CSS
Tablets (Non responsive)
Other screens (Non Responsive)

I can supply full login details and ftp access to the development site.
All work will need to be documented so that I understand what has changed. Particularly if there are changes to [login to view URL], or .js scripts.
