Making the assumption that encrypting the 'data at rest' is sufficient. Normally do this with ecryptfs with the key supplied at db start. Simple, easy and typically meets the security requirements. More exotic things such as per record encryption with an external key management system are possible but at least 2 orders of magnitude more work in both the development and on-goning care-and-feeding of the application
