Fix error on wordpress website due to charset missmach in MySQL

On my WordPress website I have an error after moving the site to a new server , it seems the problem is a charset mismatch to the Spanish content and all ñ, ó, í etc show as diamond question marks, and the XML variables pulled from the database also subsequently throw errors. Would like this corrected, and a simple procedure of how it gets done in written form, so it can be avoided in the future.
