This is a very interesting but difficult project, as I'm sure you're aware. I've downloaded the APK you linked, and performed an initial analysis.
The "X-Flow-ID" header is not a problem, it's basically a UUID4. On the other hand, the "X-acf-sensor-data" header is a lot more challenging. It has 3 main values, which are base64 strings joined by a comma. I believe the 3rd string is the actual sensor data, encrypted with AES, and the first 2 are the keys, encrypted with RSA.
While the sensor data is produced by Java code, the encryption takes place in compiled C code, in library libakamaibmp.so. This library is not obfuscated, but still, C is a lot harder to reverse than Java. Porting the Java Sensor code to Python or C# will not be an easy task either. Although I can not guarantee results yet, I'd like to continue my analysis, if you're interested.
